Instructions
-
Bake the Chocolate Sponge: Preheat oven to 350°F (175°C). Line a springform pan with parchment. Beat eggs and sugar until fluffy. Add vanilla. Sift in flour, cocoa, baking powder, and salt. Fold gently. Pour into pan and bake 18–20 min. Cool completely.
-
Prepare the Strawberry Mousse: Blend strawberries and sugar until smooth. In a small saucepan, heat the puree and dissolve the strawberry jello packet. Let cool to room temp. Whip cream until soft peaks form. In a separate bowl, beat cream cheese and vanilla until smooth. Fold in cooled puree, then gently fold in whipped cream and chopped strawberries.
-
Assemble the Cake: Place the cooled sponge in a clean springform pan. Spread the mousse evenly over the base. Chill for 1 hour.
-
Decorate with Strawberries: Arrange sliced strawberries in a flower pattern over the mousse.
-
Prepare the Jello Glaze: Dissolve the jello in boiling water, then add cold water. Let cool until slightly thickened but still pourable. Gently spoon or pour over the strawberries.
-
Chill: Refrigerate at least 4 hours, or overnight, until fully set.
-
Serve: Carefully remove the springform and slice with a sharp knife.
