Instructions
-
Prep your pan and oven: Heat your oven to 325°F. Give your 12-cup bundt pan a thorough coat of non-stick spray — and I mean thorough, every single nook and cranny — then dust lightly with flour. Don't rush this step. A well-greased pan is the difference between a cake that flips out beautifully and one that stays put.
-
Cream the butter and sugar: In your stand mixer, beat the butter and sugar together until the mixture is light, pale, and fluffy. Then add your eggs and vanilla and beat until everything is well combined and smooth.
-
Mix the dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
-
Bring the batter together: With the mixer on low, add the flour mixture and buttermilk to the butter mixture, alternating between the two and letting each addition incorporate before adding the next. Once everything is combined, mix in the lemon zest. Then switch off the mixer and use a spoon to fold in half of your blueberries by hand — gentle does it here.
-
Fill the pan and bake: Pour the batter into your prepared bundt pan and scatter the remaining blueberries over the top. Bake for 60 to 80 minutes, until a toothpick inserted into the center comes out clean.
-
Cool before flipping — this part matters: Pull the cake from the oven and let it sit in the pan for at least 20 minutes before you even think about flipping it. I know it's tempting. Wait anyway. If the pan still feels very warm at 20 minutes, give it another 10 to 15 — or slide it into the fridge to speed things along. A patient flip is a clean flip. You've been warned. 😄
-
Make the oat crumble: While the cake cools on the rack, add all your crumble ingredients to a small bowl and use your fingers to pinch and work everything together until it forms small rough crumbles. Spread onto a baking sheet and pop it in the still-warm oven for 5 to 10 minutes. Let it cool completely on the pan before using.
-
Make the glaze and finish: Whisk the powdered sugar and buttermilk together in a small bowl until smooth. Drizzle generously over the cooled cake, then immediately scatter the oat crumble over the top before the glaze sets. Once that glaze dries it's not going to hold anything — so move with purpose here. 😄
