The Day Kevin Discovered This Chicken

It was a warm June weekend, Manny had the griddle going, and that sweet, caramelized teriyaki smell was drifting through the whole backyard.

Kevin had been living with us for a while by then — and somehow, in all our years of garden parties, he’d never once had this chicken.

He took a piece, went quiet for a second, and then turned to Manny with a dozen questions about marinade time and griddle heat.

What Is Mr. Yoshida’s Original Gourmet Sauce?

If you haven’t come across it, meet your new pantry staple. It’s a rich, sweet, savory sauce — somewhere between classic teriyaki and something even more complex — sold under slightly different names depending on where you shop (you may also see it as Mr. Yoshida’s Sweet Teriyaki Marinade). You’ll find it at most grocery stores, Walmart, Costco, and online. Fair warning: it goes fast once you start using it.

Ingredients & Substitutions

Just three ingredients turn into the most-requested marinated chicken thighs at every gathering we host:

2½–3 lbs is the sweet spot for a family meal or small gathering. Thighs stay juicy on the griddle and absorb the marinade far better than breasts.

Mr. Yoshida’s Original Gourmet Sauce: The star of the marinade — use enough to generously coat every piece.

Fresh garlic cloves: Laid right on top of the chicken while it marinates. This is Manny’s touch, and it matters.

How to Make Griddle Teriyaki Chicken

1. Marinate. Pat the chicken dry, season lightly with salt and pepper, then place in a stainless steel bowl or zip-lock bag with Mr. Yoshida’s sauce poured generously over every piece. Lay fresh garlic cloves on top, seal, and refrigerate at least 2 hours — overnight is even better.

3. Griddle it. Preheat your flat griddle to medium-high. Shake off excess marinade and cook the chicken undisturbed 5–6 minutes per side, until deeply golden and caramelized.

Debbie’s Kitchen Tips

  • Marinate at least 2 hours, overnight if you can — the longer it sits, the deeper the flavor.
  • Don’t skip the garlic cloves — they perfume the whole marinade in a way the sauce alone doesn’t.
  • Pat the chicken dry before it hits the griddle, or excess marinade will steam it instead of searing.
  • Let it release on its own — if you’re fighting it to flip, it isn’t ready yet.
  • Always check with a meat thermometer — 165°F, every time, no guessing.

A Few Ways to Change It Up

  • Add a tablespoon of fresh grated ginger to the marinade for extra warmth
  • Finish with sesame seeds and sliced green onions
  • Try it with chicken breasts if that’s what you have — just watch the time, they dry out faster

This chicken is fantastic over steamed rice, and it’s become a favorite paired with my Grilled Peaches with Butter, Sugar, and Cinnamon — sweet, smoky, and one of my favorite combinations at a garden party.

Storage & Reheating

Store in an airtight container in the fridge for up to 4 days — the flavor actually deepens overnight. Freeze for up to 3 months. Reheat in a covered pan over low heat with a splash of water or extra sauce, or back on the griddle over medium-low, Manny’s preferred way.

Frequently Asked Questions

Where can I find Mr. Yoshida’s sauce?
Most grocery stores, Walmart, Costco, and online retailers carry it.

Can I use chicken breasts instead of thighs?
You can, but thighs are the better cut for this teriyaki chicken thighs recipe — they stay juicier and absorb more marinade.

How long should I marinate the chicken?
At least 2 hours, though overnight is where the real flavor happens.

Should I cook the leftover marinade to use as a sauce?
No — discard the marinade the raw chicken soaked in. Set aside a separate portion of sauce beforehand if you want extra for serving.

Instructions

  1. Pat the chicken dry and season lightly with salt and pepper on both sides.
  2. Place the chicken in a large zip-lock bag or shallow dish. Pour Mr. Yoshida's sauce generously over every piece, lay the garlic cloves on top, seal, and refrigerate at least 2 hours, ideally overnight.
  3. About 20–30 minutes before cooking, remove the chicken from the fridge to come toward room temperature.
  4. Preheat a flat griddle over medium-high heat. Remove the chicken from the marinade, shaking off excess, and place on the griddle.
  5. Cook undisturbed 5–6 minutes until deeply golden and released naturally, then flip and cook another 5–7 minutes until cooked through and caramelized.
  6. Check for 165°F internal temperature with a meat thermometer.
  7. Rest 5 minutes before serving.

Note

Works equally well on an outdoor grill over medium-high heat — watch the sauce closely so it caramelizes without burning.
