homemade marzipan potatoes

Marzipan Potatoes (German Marzipankartoffeln)

Prep Time: 20 minutes
Rest Time 30 minutes
Total Time: 50 minutes
Sweet little balls of almond marzipan rolled in cocoa powder to look like tiny potatoes. A classic German treat made with just 3 ingredients.

Ingredients

Servings: 20 pieces
  • 1 batch homemade marzipan about 8 oz / see homemade marzipan recipe
  • 2 to 3 tablespoons powdered sugar plus more as needed
  • 2 tablespoons unsweetened cocoa powder
  • Pinch of cinnamon optional

Instructions

  • Knead: Dust a work surface with powdered sugar and knead the marzipan until smooth. Add more powdered sugar if sticky.
  • Shape a log: Roll the marzipan into a log about 1 inch thick.
  • Cut: Cut into pieces about 10 grams each (the size of a large marble).
  • Roll: Roll each piece into a ball between your palms.
  • Add eyes (optional): Poke 2 or 3 tiny dots into each ball with a toothpick.
  • Coat: Roll the balls in cocoa powder (mixed with cinnamon, if using).
  • Shake: Place in a fine mesh sieve and gently shake off the extra cocoa.
  • Rest: Let sit on a parchment-lined plate for 30 minutes before serving.

Notes

  • Amounts depend on how much marzipan you have. Use about 1 tablespoon cocoa powder for every 4 ounces of marzipan.
  • If using almond paste, knead in extra powdered sugar until firm enough to roll.
  • Store in an airtight container in the fridge for 7 to 10 days.
