Raspberry Cheesecake Cookies
Equipment
- large Mixing Bowl
- Electric hand mixer
Ingredients
- 1 cup Butter Soft
- 4 oz cream cheese Soft
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 3/4 cup all-purpose flour
- 1/2 cup frozen or fresh raspberries
- 1/2 cup white chocolate chips
Instructions
- Preheat oven to 350°
- Take the soft butter and cream cheese mix till creamy. Add the sugar and mix again.
- Mix in the brown sugar and vanilla extract, then add the egg and mix again.
- In a separate bowl combined the flour, baking powder, baking soda and salt together. Add the flour mixer in and beat until all combined.
- With a spatula fold in raspberries chopped or whole, also the white chocolate chips.
- Line baking sheet with parchment paper. Take a full spoon full and line 6 to 8 cookies leaving space in-between for them to expand.
- Bake 10-13 minutes until golden
