Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 tsp allspice
- 1/8 tsp ground ginger
- 1/2 cuo butter softened
- 3/4 cup sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 1/2 cup milk
- 10 – 15 whole plums depending on size, cut into 4 slices
Instructions
- Set the oven to 350°F. Butter an 8 inch baking pan.
- Mix the flour, baking powder, cinnamon, nutmeg, ginger, cloves, and salt, in a medium bowl.
- Add softened butter and sugar to a separate large bowl. Mix for several minutes, until creamy. Add the egg, vanilla, and almond extract. Mix until combined.
- Add half of the milk and half of the flour mixture to the batter. Mix on low speed with a mixer just until combined, then add the rest of the flour and milk to the bowl and mix until well combined.
- Pour the cake batter into the baking pan.
- Use the spatula to even out the batter. Put the plums on top, with the skin side up, around the edge and work your way in forming two rings.
- Bake for 50 – 60 minutes until the top is golden. A toothpick inserted in the middle should come out clean. Let the cake cool in the pan for 10 minutes. Run a knife around the edges of the pan. Then remove the springform edge. Let the cake cool completely. Then slice and serve.
