This Baileys Irish Cream Chocolate Mousse is the ultimate treat for chocolate and Irish cream lovers. Its creamy texture and bold flavors make it a standout dessert. Easy to prepare yet luxuriously decadent, it's ideal for special occasions or just because.

Ingredients

  • 1 pk of gelatin
  • 2 tbsp cold water
  • 1/4 cup of boiling water
  • 1/2 cup sugar
  • 2 tbsp of cocoa powder
  • 1 1/2 cups of cold heavy cream
  • 1 tsp vanilla extract
  • 1/2 cup Baileys

Instructions

  • Bloom the Gelatin - In a small bowl, sprinkle 1 packet (¼ oz) of unflavored gelatin over 2 tablespoons of cold water. Let it sit for about 5 minutes until the gelatin absorbs the water and becomes thick.
  • Dissolve the Gelatin - Add ¼ cup of boiling water to the bloomed gelatin and stir until completely dissolved. Set aside and allow it to cool to lukewarm, but don’t let it set.
  • Combine the Dry Ingredients - In a large mixing bowl, whisk together the sugar and cocoa powder until well combined. This helps prevent lumps in your mousse.
  • Whip the Cream - Add the cold heavy whipping cream and vanilla extract to the sugar and cocoa mixture. Using an electric hand mixer, beat on medium speed until the mixture begins to thicken and soft peaks form. Be careful not to over-whip.
  • Add the Baileys - Slowly pour in the Baileys Irish Cream while mixing on low speed until incorporated. The mixture should remain light and fluffy.
  • Incorporate the Gelatin - With the mixer running on low speed, gradually pour in the cooled, dissolved gelatin. Mix just until everything is combined and the mousse is smooth and creamy. Make sure the gelatin is still liquid so it blends evenly without forming lumps.
  • Refrigerate - Spoon or pipe the mousse into individual dessert glasses or serving bowls. Cover and refrigerate for at least 2–4 hours, or until the mousse is fully set.
  • Garnish and Serve - Before serving, garnish with chocolate shavings, a dusting of cocoa powder, or a dollop of whipped cream, if desired. Serve chilled and enjoy!

Notes

For the best results, make sure your heavy cream is very cold before whipping. Also, allow the gelatin mixture to cool before adding it to the mousse, but don’t wait too long or it will start to set.
