Prep Time: 20 minutes
Cooling Time 15 minutes
Cook Time: 55 minutes
Total Time: 1 hour 30 minutes
A soft, buttery loaf cake layered with chopped apples and a gooey brown sugar cinnamon swirl. All the flavor of an apple fritter, baked instead of fried.

Ingredients

Servings: 10 slices

Batter

  • ½ cup butter softened
  • ⅔ cup granulated sugar
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon salt
  • ½ cup milk

Cinnamon Apple Layers

  • 2 to 3 Granny Smith or Gala apples depending on size, peeled and chopped small
  • ½ cup brown sugar
  • 1 ½ teaspoons ground cinnamon

Glaze (optional)

  • ½ cup powdered sugar
  • 1 to 2 tablespoons milk

Instructions

  • Preheat: Heat the oven to 350°F. Grease or line a 9x5-inch loaf pan with parchment paper.
  • Cinnamon sugar: Mix the brown sugar and cinnamon in a small bowl.
  • Apples: Peel, core, and chop the apples into small pieces.
  • Cream: Beat the butter and granulated sugar for 2 to 3 minutes until light and fluffy.
  • Eggs: Add the eggs one at a time, mixing well after each.
  • Dry ingredients: Whisk the flour, baking powder, and salt in a separate bowl. Add to the butter mixture and mix on low until blended.
  • Milk: Mix in the milk just until smooth.
  • First layer: Spread half the batter in the pan. Top with half the apples and half the cinnamon sugar.
  • Second layer: Add the remaining batter, then the remaining apples and cinnamon sugar.
  • Swirl: Gently press the apples into the batter and swirl with a knife.
  • Bake: Bake 50 to 60 minutes, until a toothpick in the center comes out clean.
  • Cool: Cool in the pan 15 minutes, then move to a wire rack.

Glaze (optional)

  • Make the glaze. In a small bowl, stir together the powdered sugar and 1 tablespoon of milk. If it’s too thick to drizzle, add a little more milk, a few drops at a time.
  • Glaze the loaf. Once the bread is mostly cool, drizzle the glaze back and forth over the top with a spoon. Let it set for about 10 minutes before slicing.

Notes

  • Chop the apples small so they don’t sink.
  • If the top browns too fast, cover loosely with foil.
  • Optional glaze: Mix ½ cup powdered sugar with 1 to 2 tablespoons milk and drizzle over the cooled loaf.
