German Sunken Apple Cake

Equipment

  • Electric mixer
  • Standing mixer (optional)
  • Sifter (for flour)
  • 8 Inch cake pan

Ingredients
  

  • 1 stick unsalted butter room temperature
  • 1 cup sugar
  • 1 tbsp vanilla extract
  • 3 eggs
  • 1 2/3 cups all purpose flour
  • 1 tsp baking powder
  • 1/4 cup milk or as much as needed
  • 4-5 apples peeled and cored
  • 1/4 cup almond slices (optional)
  • 1 tbsp lemon juice

Instructions
 

  • Preheat the oven to 375 degrees.
  • Peel and core the apples and cut them into quarters. Then cut the quarters into thin slices. (I would not recommend Granny Smith apples as they are too sour.)
  • Sqeeze some lemon juice on apples and mix them up, so they do not turn brown. Spinkle 2 tbsp of the sugar on slices and set apples to the side.
  • With the mixer, cream the butter then add the sugar and vanilla extract, mix again.
  • Divide the eggs, add the yolks into the batter and set the egg whites aside in a separate bowl. Mix the yolks and batter until combined.
  • Add the baking powder in the flour. With a sifter, sift the flour into the cake batter. It works better if you do half the flour at a time, mixing in between. When adding second half of flour pour the milk in as well.
  • If the batter is not creamy you may need to add a touch more milk.
  • Now take the egg whites and beat them until they have stiff peeks. (A standing mixer such as a Kitchen Aid makes this much faster)
  • Very gently as to not take the air out of the egg whites, fold egg whites into the batter, half at a time.
  • Grease cake pan with butter spray or regular butter. Pour cake batter in pan and even out. Now going from the outside in, line the apple slices in a shape of a ring, pushing each slice slightly into the batter.
  • Top with almond slices or even a nut of your choice. (optional)
  • Bake for 45-50 minutes or until nice and golden brown.
  • Delicious with whip cream on top!
