  1. Mix all the dry ingredients together in a mixing bowl

  1. In a second mixing bowl add pumpkin puree, sugar and brown sugar. Mix thoroughly. Once mixed, add eggs and vanilla and mix again.

  1. Add vegetable oil and fold in with spatula. Add half of the flour and mix until combined, then add the rest and mix. Don't forget to scrape all the flour off the sides!

  1. In a 3rd bowl fluff up the softened cream cheese and when creamy add the sugar. Mix.

  1. Add vanilla extract to it and the egg yolk. Mix until well combined.

  1. Prepare a muffin tin with liners and spoon the pumpkin mix equally into the muffin pan. If it is a regular size muffin pan you have some leftover for at least another 2 or 3.

  1. Add a cream cheese mixture blob on top of each muffin with a spoon and swirl it into the batter with a toothpick or skewer. Just slightly so you achieve the marble effect.

  1. Bake at 375°F for 18 to 20 minutes. Put on a cooling rack to cool completely.
