Beat 6oz of room temperature cream cheese for about 1 minute.
Add powdered sugar and beat until creamy.
Make little cream cheese balls of the size of a teaspoon and but them on a parchment paper.
Freeze them for at least 1 hour.
In another bowl add flour, baking soda and salt and mix.
Set it aside.
In a bigger bowl add the softened butter and white sugar and mix until fluffy and creamy.
Add 1 egg and vanilla extract and combine well.
Add brown sugar while still mixing.
Take a spatula and scrape the batter of the inside walls.
Add half the flour and combine.
Then pour in the rest of the flour and fold in with a spatula.
Add the cut up strawberry pieces and carefully fold them into the batter. Gently so you don't squeeze them.
Line the baking sheet with a parchment paper and scoop out the batter.
Use a smaller scoop.
Now take two of the scoops. Make a hole in the middle of both of them and burry the cream cheese ball on one side. Take the second on and put on top. Form a nice ball and seal the sides. Put it back on the backing sheet. Do this with all until they are used up.
Bake at 350°F for 15 to 18 minutes. Let them cool down a little bit.
