Ingredients
  • 2 Bell Peppers (Any color you want, I used red)
  • 2 smaller zucchini
  • 1 medium onion
  • 4 medium potatoes (gold or russet)
  • 1 large sweet potato
  • 2 tbsp olive oil
  • 1 tsp lemon pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
Instructions
  1. Wash your veggies under running water.

  2. Get a cutting board and sharp knife and cut all the veggies. I slice them in slices and then quarter them and collect them all in a bowl.

    Drizzle olive oil and all the seasoning over the veggies. Then mix the veggies so all of them get coated with oil and seasoning.

    Pour on a parchment paper layered baking sheet and roast for about 25 to 30 minutes at 425°F. Add the sausage after 15 minutes.

  5. Cut up Kielbasa on a cutting board

    Cut up the Kielbasa and put it on top of the veggies. Roast for another 10 to 15 minutes.

  6. Take it out of the oven and let cool just a bit for about 5 minutes. Serve and enjoy!

Any veggie you have on hand or like to add feel free. The ones I have used before are: Broccoli, Garlic Cloves, Mushrooms, Brussel Sprouts, Carrots .....
